Errington Cheese’s signature Corra Linn is traditionally made using only premium raw ewe milk and vegetarian rennet. The sheep roam freely on our family farm in the picturesque Upper Clyde Valley.

 

Throughout the summer Errington Lacaune sheep supply us with bountiful volumes of milk. Since 2008 we have used the surplus to venture into artisan hard cheese making. And to great success: Corra Linn is a multiple cheese award winner! Named after the stunning Clyde waterfall from which we drew inspiration.

 

Made traditionally with unpasteurised ewe-milk and vegetarian rennet, the Corra Linn truckles are pressed overnight, hand rubbed with rapeseed oil, and wrapped in cheesecloth. Aged in traditional farmhouse buildings for a minimum of 12 months increasing the intensity of the nut characteristics within the cheese and forming a dry rind. Incredibly moreish and savory flavor with a feathery grain texture.
